Rumors and Reunions
I’ve heard whisperings of this dish when I was young. I’ve seen it on tables of family reunions, but never made it in time to try it before vanished. It’s elusive and intriguing to say the least. It’s a hot chicken salad and you damn well better be ready. Okay I talk a lot of shitz but this is really good! It’s creamy and #delicious and the biggest dilemma is do I use the fork or the big spoon🌱
Recipe:
I adapted this recipe from a traditional non-vegan recipe. I added pasta and subtracted a couple things because I did not have them.
Ingredients:
1 pkg vegan chicken or shredded seitan (I used Gardein and omitted the sauce that comes with it)
Oil for cooking
1- 1 1/2 cup cooked pasta of choice
1/2 tsp each:
salt/pepper/poultry seasoning/garlic powder
1 stalk celery, diced
1/2 medium onion, diced
1/4 cup container sour cream
1/4 cup vegan mayo of choice ( I used Hellmans here)
1 tbsp pimentos
1/2 cup vegan cheese of choice ( I used Follow Your Heart mozz/cheddar shreds)
Optional: Jar of sliced mushrooms
Instructions:
Preheat oven to 350. Cook chicken, celery, and onion and spices in cast iron or pan until done. Then add sour cream, pimento, and mayo and cooked pasta. If using cast iron, top with cheese then put in oven. If pan- transfer to casserole dish, top with cheese, then oven. Bake 20 min or until bubbly🌱
