I made a really S-I-M-P-L-E dinner last night. I’m trying to cut back on the carbs a little. I know what you’re saying.... cutting back on the carbs Kelly?? How dare you! But sadly, I needed some resolutions and this is one of them.

But don’t you worry, I’m giving myself some cheat days so I can have tater tots! Anyway, besides being #delicious and easy to make, its also inexpensive and high in protein! So seriously, I’m totally killing this healthy thing already haha🌱

Deets:
1 cup frozen spinach
2 chorizo links by @lightlifefoods
1 can cannelloni beans
1 can diced tomatoes w/oregano and basil drained
1 small onion
1 clove garlic sliced
1/2 package frozen riced cauliflower
1/2 cup veg broth
Olive oil
Heat olive oil in a pan on med and throw in onion. Cook until a little soft, then add garlic and chorizo. Cook for 5 min and add veg broth and stir. Then add salt and pepper, diced tomatoes, beans and spinach. Lower heat and cook until spinach is warmed, then put in cauliflower and cook 5 more minutes. Taste for seasoning before eating the entire thing. Because you definitely will!
