Lettuce wrap success! This is a #delicious and #healthy dinner for the whole family. I love easy meals that you can eat with your hands. Also, this is a great meal to get the kids involved. The ones old enough to use sharp items. Recipe: Curry Dusted Curry Tofu - recipe here
1-2 carrots shredded
1 red chili pepper, sliced with seeds removed
Handful of bean sprouts
1/2 small onion sliced
1 cup slaw mix (this can be purchased in bags pre-made)
3 green onions, sliced
1/2 crispy rice noodles
1 head iceberg lettuce
Arrange cut veggies and tofu on a plate and serve with sauces listed below or sauces of your choice. Quick peanut sauce: Use about a tbsp of peanut butter, 1 tsp soy sauce, 1 tsp vinegar, 1/2 tsp garlic powder, 1/2 tsp ginger powder and water (used to thin out the sauce, so add a little at a time until desired consitency).
Quick spicy mayo: 2-3 tbsp vegan mayo ( I use Vegenaise by Follow Your Heart)
1-1 1/2 tsp Chili garlic sauce
Mix and taste.
I also used a store bought sweet and sour sauce.
