I love going to diners. It’s probably the most difficult place to get vegan food but damn I love the atmosphere, knowing some of these places have been around for years. The servers and cooks have been there just as long. The food’s always the same except a few staple specials thrown in here and there.
I also like that you can sit at the counter and watch the people cook and for some reason you’re never concerned about how everything looks behind the line. You just know you’re getting good food because they’ve cooked the same thing for so many years. The patty melt has been around since the 1940s, possibly
even the 1930s. It’s obviously a play on the cheeseburger, but these awesome little sandwiches can be found in every little diner from here to Maine. I haven’t had one in forever, but I remember being little and my granny getting me one in a Woolworths diner(def google that). I was probably 8 years old but at the same time I also got a malted milkshake and that was it. My day was made🌱
Ingredients:
1/2 pkg veggie beef (I used lightlife but beyond burger would be perfect)
Salt/pepper/garlic powder
Vegan worscestershire Sauce
A few onion slices
Provolone or Swiss cheese
(I used Follow Your Heart provolone)
Rye or marble rye bread
Butter
:
Sauté onions in a pan with butter until carmelized. In a bowl, combine beef, spices and Worcestershire. Mix until combined and then make two patties. I made mine a little thinner to cook faster. Heat butter in a skillet and lay down patties. Cook 3-5 min on each side or until brown. Spread butter on two pieces of bread. In a skillet, melt butter and lay one piece of bread butter side down. Top with a piece of cheese and a hamburger patty. Top with onions, another piece of cheese and another slice of bread, butter side down. Brown on both sides. I served mine with roasted potatoes smeared with #followyourheart garlic aoli🌱
