There are so many seitan recipes out there, but basically they're all the same with little variations. Here's a simple recipe that we have adapted:
Ingredients: 2-3 tbsp nooch
1 can chickpeas, pintos or white beans
1 tsp garlic powder
1 tsp salt/pepper
4 tbsp ketchup
2 tbsp soy
1 tbsp yellow mustard
1/2 cup veg stock
1 1/2 cup vital wheat gluten
Instructions:
In food processor, add beans and everything except gluten. Mix until beans are smooth. In separate bowl add gluten, then pour bean mixture on top. Knead until elastic. From here you can form into a log and wrap with cheesecloth. Or, you can slice it up and wrap individually in foil. We steam ours for about 30 minutes. Then, you can season and cook in the oven or pan fry, for whatever you're using it for.
