Is it 'steak' or is it seitan? You decide.

Why does the work steak have to be associated with meat? After having these sliders, I am officially making seitan the new 'steak'.

Sliders you can feel good about

Sadly, my favorite holiday month is coming to an end. So what better way to eat my feelings than with seitan ‘steak’ sliders made with homemade rolls, creamy horseradish, and crispy onions. .

The story behind my freedom from red meat

I have not had red meat in 26 years. I have no idea what it tastes like, because fortunately I can't remember. I quit eating it because my roommate at the time didn't eat meat, so I figured I would give it a try. It wasn't really hard to do. I think I also gave up chicken and fish at that time, which I did end up eating again, but I never went back to red meat. My kids have never had meat of any kind. Except, of course, that one time I caught my granny trying to give my oldest some chicken. She didn't know. The point is, none of us, as a family, know the taste. We smell it outside, at BBQ's and around restaurants, but we'll never really know. I hope the kids never know. For now, for some reason, though, we try to recreate the sensation. I want people to be able to feel like they're having meat, without actually having meat, so they can see that it's not necessary. You can still have great food. Not all vegans have healthy veggies and smoothie bowls all the times. Some of us love comfort food and want to eat the way we always have while at the same time, omitting all the bad stuff. I love when non-vegans try out vegan food that looks like it has meat or dairy, only to find out it's not there and it's still delicious.


Recipe: The recipe for the seitan steaks makes a lot, so only use enough for how many sliders you plan to make and you can freeze (for months-I have no idea how long) or refrigerate (for four days) the rest.


Ingredients:

1 batch of homemade rolls or store bought vegan rolls- recipe will be shortly for homemade

1 batch of 'steak' seitan - see recipe here

1 tbsp raw horseradish

1 tbsp vegan mayo ( I use Hellmans or Follow Your Heart)

Vegan Worcestershire Sauce

1/2 white onion cut into rings

1 cup fine panko crumbs

1 cup plant based milk (I like to use soy)

Hamburger pickle slices

Veg oil to fry


Instructions:

Heat some vegetable oil in a non stick pan or cast iron skillet. Take a few slices of the 'steak' seitan and lay it in the oil. I would season a little with salt and pepper. Add some worcestershire sauce to coat the steaks and cook until heated through. Remove from heat and slice thinly. Next, heat up your skillet with vegetable oil. Take two small bowls, one with panko crumbs and the other with soy milk. Dredge the onions in milk, then panko, then repeat and lay in oil. Fry until brown, turning halfway through. Remove from oil and lay on towel to drain. In a small bowl, mix the horseradish and mayo, then smear on both sides of roll. Add steak and top with fried onion and pickle.
