Food in a cone

Apparently food in a cone is a thing and I love it! I'm currently thinking about how many different foods I can stuff into a cone.

Portable food just made my life a whole lot easier

I’ve seen a lot of people putting mac and cheese or bbq or both into cones. So of course I had to put some sort of food into a cone. And I love Mexican inspired food, so you’re damn right I stuck that shitz into a tortilla cone. I know what you’re thinking: ‘Kelly you’re my hero’ . Yes, yes I know🌱

Ice cream is not the only thing going in a cone these days

Ingredients:

1 pkg 'beef' crumbles (I used Gardein here)

1 packet taco seasoning of choice

3/4 cup water

1 can of black beans or pintos, drained

small to medium flour tortillas

1 avocado

Lettuce

1/2 onion

Vegan cheese shreds of choice (I love Follow Your Heart)

Chipotle sauce ( I used a local restaurant's brand)

foil

Oil for cooking and greasing foil

toothpicks

Instructions:

Heat oven to 350 degrees. In a skillet, add beef crumbles with a little oil. Cook on medium heat until cooked through. Add taco seasoning and 3/4 cup water. Stir until combined, lower heat and simmer 10 minutes. In the meantime, chop your onions and avocado and heat your beans. Take a piece of foil and mold into the shape of a cone. Put some oil around it so tortilla won't stick. Wrap tortilla around mold and secure with toothpicks. Put in oven to form. Watch carefully so tortillas don't burn. Cook until crispy them remove from oven and remove tortilla from foil mold. Fill the tortilla with lettuce and then top with rest of ingredients.
