Vegan Wellington

Having watched my favorite loud, obnoxious, foul mouthed British chef yell consistently about how the Wellie is raw inside, I was always curious to know if I could make one minus that lovely man yelling at me. There's the smallest chance it would ever be raw inside, since the meat's not real and I'm not harming any animals so, I win either way.

"It's not raw! It's not raw!"

I love puff pastry. I like that you can use it for a savory dish or it can be used in desserts. I also love the fact that it's just accidentally vegan. I feel like if puff pastry can be 'accidentally vegan', then many other things can be too. But that's another post.

Recipe:

For filling: 1 pkg mushrooms 1 pkg Lightlife veggie sausage 1-1 1/2 cups cooked mashed potatoes 2 tsp Poultry seasoning Salt/pepper to taste 1 tsp dried minced onion 1 tsp oregano/garlic powder 2 tbsp ketchup Dash soy sauce Puff pastry sheet Sheet of foil Tsp soy milk Preheat oven to 400. Cook mushrooms, salt, pepper, 1 tsp poultry seasoning. Once cooked, chop with hand chopper in pan. Take out most of mushroom leaving some with the liquid in pan. Set aside. In bowl, add mushrooms, sausage, spices and ketchup. Mix together with hands until everything is incorporated. Lay out foil and grease with a little oil then take half mixture and pat down. Then add mashed potatoes on top and cover with rest of mixture and form into loaf. Place on cookie sheet and cook in oven for 20-25 min or until sausage is almost done. Once done remove and set aside. Roll out pastry on floured surface into a large square. Lay onto cookie sheet. Turn roast onto pastry and cover, cutting bits off as necessary. Decorate with leftover pastry and spoon soy milk on top for glaze. Place in oven for about 15-20 min or until brown on top. Serve with gravy. For gravy: 1/4 small onion Leftover cooked mushrooms Poultry seasoning/salt/pepper to taste 1 tsp soy sauce Water 1 tbsp flour Heat up skillet with mushrooms and add onion. Season with spices. Cook until onion is translucent. Add flour and then water a little at a time until desired thickness. Taste for seasonings🌱
